Élevage presents maturation as a critical phase within wine production.


After fermentation, wine enters a period of rest and development. Time, environment and restraint allow structure to soften, flavours to integrate and balance to form.


The barrel acts as an active environment, holding the wine as it evolves. What emerges is shaped not only by what was produced, but by how it is held.


Within Harvest, Élevage positions time as a defining force.

Depth forms through rest.

Quality develops through duration.

Élevage is about what happens after the work is done.


After harvest and fermentation, everything shifts into a quieter phase. Things settle, integrate and become resolved.

In wine, this takes time. Held in barrel, structure softens, flavours come together and balance develops. It cannot be rushed. The outcome depends on how it is held.

That same rhythm extends beyond the vineyard.

Rest and reflection are part of the cycle.

Élevage is an homage to The Plough, a place where my work has been held, and where I come to rest.


In the work, she reclines within that pause. Grounded, present and without urgency. The glass in her hand carries the outcome, shaped by everything that came before and defined by the time it was given.

Within Harvest, Élevage holds this stage.
